We have had a BANNER year of tomatoes in our garden this year, and WOW!! So far, my husband and I have managed to can 21 quarts as well as make my annual, DELICIOUS, homemade marinara sauce! I posted about this on Facebook a week or so ago, and so many people asked for my recipe, that I thought I would include it here.
The first ingredient is yummy, homegrown tomatoes! You can use any kind, and I mix them all together. Cherry, full-sized, all colors and types. YUM!!
Wash and slice up the tomatoes, leaving the skins on, and add them to 9×13″ pans. Then, I add chunked up onion, zuchinni chunks, sometimes peppers if I have them, and lots and lots of cloves of garlic. I sprinkle fresh basil over everything, heavily drizzle Olive Oil and salt, and then bake for 425 degrees for about an hour. YUM!! These roasted veggies make my house smell so good!

After they have cooled, I pour them into my Vitamix blender and lightly blend until the chunks are just barely smooth. I don’t add all the water, because then that’s just more work for me to simmer out at the end when I’m making dinner. LOL

I like to freeze my marinara, but you could can it if you’d like! However you like to preserve your food works great.

I looked and looked for the website link for the recipe I started using years and years ago, but unfortunately, the link no longer works. I got the original recipe from Frugal Living NW. I think you could probably Google some recipes for more exact measurements and details, but it’s actually so easy and nothing needs to be measured! Have fun with it!
